Talk about the EASIEST dinner ever – I made this recipe while I was watch The Office on Netflix – and my family loved the results

It is like bitesize pot pies – this recipe makes a TON as well so I ended up making about 20 of these little pies ( so guess what Eric is having for dinner tonight

Just reheat in the microwave for about 45 seconds and you are good to go!

I am VERY excited this is the 33rd from Marie the first recipe ( Spinach and Artichoke Dip Recipe ( Recipes from Marie) )

I added a little cheese to the pot pie because why not 😉 I did not use all the chicken ( I would normally use chicken breast – but Winco had a great deal on chopped chicken breasts) so it could about $1 in meat for the whole recipe

I did end up cutting the meat more

How cute are these little pies – I cannot believe how frugal it was too – in the ingredients there is a general spice mixture I used for the chicken – you can easily use salt and pepper – I have a personal spice mix ( if you want the recipe I could post it )

Mini Chicken Pot Pie Recipe

Ingredients

  • ½ - ¾ pound of chicken breasts - diced
  • 1.5 Cups of Mixed Veggies ( thawed or drained)
  • ¼ Cup of Cheddar Cheese
  • 1 Can of Cream of Chicken Soup
  • Salt
  • Pepper
  • Can of Biscuits - The mixture makes enough for about 24 biscuits

Instructions

  1. Preheat oven to 400
  2. In a muffin tin place a biscuit and make sure the dough has the same shape as the cup - takes a little work
  3. In a skillet - cook chicken - salt and pepper
  4. In a bowl combine - soup, veggies, cooked chicken
  5. Place about 2 tablespoons in each dough pocket
  6. Cover with cheese
  7. Bake for 20 minutes
  8. Enjoy
